Easy Sweet Potato Baked Donut Recipe

There’s nothing better than cozying up on your favorite seat after a long day with a cup of coffee and a donut. Especially this easy sweet potato baked donut! It's a great snack or dessert to take to the next holiday dinner, the weekly family gathering, or just keep them all for yourself, no judgment here!

Easy, Breezy Donuts Recipe

Thanks to @nutritionally.stripped, I’m going to share a recipe for super easy, baked, incredibly soft, naturally sweetened, and nutritious donuts. The not-so-secret ingredient is sweet potato! Even if you’re not the biggest fan of sweet potatoes, I’m sure you’ll love them in donut form. Pureed sweet potato will act as a substitute for the oil and butter you’d normally use. It adds moisture to the donuts and is the reason for that natural sweetness you’re going to taste. 

Use Up Those Leftover Sweet Potatoes

I love this recipe because it’s an awesome way to use up any leftover sweet potatoes you may have roasted or baked for a meal. I always overestimate how many sweet potatoes my husband and I can eat and we end up with 1 or 2 extras, which is conveniently the amount you’d need for this recipe!

If you don’t have time to roast the sweet potatoes, just poke holes in them with a fork, pop it in the microwave, and press the potato button. You want it in there for about 5 - 7 minutes and it should come out soft enough to mash.  

All you need are the ingredients and a donut pan. It will be worth it a trip to the store to get the pan, I promise! Great, now that nothing else is standing in the way of you and these donuts, what are you waiting for?

 

Makes 6 - 7 donuts

Ingredients:

  • 1 cup oat flour (or ground a cup of old fashioned oats in a food processor)
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ½ cup mashed sweet potatoes (use canned or poke about 1 medium potato all over with a fork and bake at 400 °F/200 °C for 45 minutes until soft to mash, or pop it in the microwave for 5 - 7 minutes)
  • 1 large egg
  • ½ tsp vanilla extract
  • 3 tbsps milk of choice
  • 1 ripe medium banana (or ½ cup applesauce)
  • ½ cup of maple syrup or honey
  • 1 tsp of baking soda
  • 2 tsp apple cider vinegar

Method:

  1. Preheat oven to 350 °F/180 °C and lightly grease a donut pan.
  2. In a bowl, combine oat flour, salt, and spices.
  3. In a small bowl, combine baking soda and vinegar, then set aside.
  4. In a food processor, mix together mashed sweet potato, milk, banana, maple syrup, egg, and vanilla extract.
  5. Combine dry ingredients, wet ingredients, and baking soda mix.
  6. Pour about 4 tbsps into the greased donut wells. 
  7. Bake for around 25 minutes and let it cool off completely before removing them from the pan. 
  8. Choose the topping you prefer, I dipped each donut into melted dark chocolate (5 squares of  70% dark chocolate bar melted in a microwave safe bowl with a tsp of coconut oil), then dipped them into some finely crushed raw almonds. 
  9. You can also mix 2 tbsps of coconut sugar with 1 tbsp of milk and drizzle the mix over the baked donut as another topping option!
